Can you have two separate supplies eg (160A) into one building with a Main switchboard at either end of the building for each supply, the installation wiring would be kept separate?

Short answer is "yes".

In both ESRs & Wiring Rules, an electrical installation is defined in terms that do not tie it to a particular structure.
One structure can include several installations; and one installation can be spread across several structures.

In the case of your 2 x 160 A supplies, I would expect that this building will include at least two and possibly several installations; each installation being supplied from only one of the supplies.
But since one installation can also have several different consumers; it's important to be clear about which scenario you are dealing with.
As defined in the Act, each installation starts at a PoS. The local network should be able to advise how many PoSs there are, and exactly where they are. Noting that PoS is NOT necessarily the same as ICP.

This question of single vs multiple installation has direct effects on how earthing & switching must be set up in order to comply with Wiring Rules.
Also affects the status of some fittings; eg often the PoSs for several installations may be located in one or more groups, usually at a switchboard; with everything upstream (eg 'rising mains' ) not being part of any installation; but actually being (private) "works". Which means such 'rising mains' aren't actually "mains" at all.

Large installations may take supply from more than one PoS, with bus-tie switching to facilitate redundancy. Eg a base hospital or large industrial plant.
